Ambient meals, or 'shelf-stable meals', are meals that can be safely stored at room temperature for use before their best-before date.
They can be stored this way either because their ingredients are naturally stable at room temperature or because the meal has been prepared or packaged in a special way.
In order to provide you with a wide range of meals which can be stored suitably, and also reheated easily, our team have worked with suppliers to prepare meals using a Sous Vide method of cooking.
Sous Vide is French for "under vacuum". It is a method of cooking in which food is sealed in airtight packing then placed in a temperature-controlled steam environment. The intent is to cook the item evenly, ensuring that the inside is properly cooked without overcooking the outside, and retain moisture.
Because it is sealed in the packages, the aromatics are retained, not lost in the steam. The cooking process ensures that the food is totally cleared of any bacteria, which makes the food safe for long periods, without the use of unnecessary preservatives.
Other meal options, are prepared using traditional cooking and packing methods.
This means you can store these Diet Chef meals at room temperature, without the need to take up space in your fridge or freezer.
The meals are developed by our Executive Chef then prepared, sealed in a pouch or tray and cooked in a pressure cooker.

Your frozen meals will be securely packaged in a sturdy cardboard box and packed with dry ice. In addition, your order is insulated with recyclable paper based thermal insulation, making sure your food arrives with you perfectly frozen, ready to pop straight in your freezer.
You don’t need to be in to receive your delivery as we can leave your box with a neighbour or in a safe place. Just make sure your frozen meals are put into a freezer within 24 hours of your order being dispatched.
When you order both frozen and ambient meals you will receive your order in two separate boxes as part of a single delivery.

Our specially designed packaging makes sure your food arrives frozen. Your frozen meals will be securely packed in a sturdy cardboard box and covered with cooling dry ice packs. In addition, your order is insulated with recyclable paper based thermal insulation, making sure your food arrives with you perfectly frozen, ready to pop straight in your freezer.
Dry ice is solid carbon dioxide (CO2) and gets its name of ‘dry’ ice as it goes through a natural process of ‘subliming’ going from a solid to a gas without passing through a liquid phase (hence no melted water leaking from the packs). In its solid state this can only occur at -78°C, therefore extremely cold, and can cause freezer burns.
We have carried out extensive transit testing to validate temperature control. Our packing team know how many dry ice packs to use, depending on: number of meals, size of box and outside weather conditions.
The dry ice packs will keep your order frozen for up to 24 hrs. You may find the ice packs almost empty as solid dry ice will evaporate to gas during transit, this is perfectly normal, this process of sublimation plays the part of keeping your Diet Chef meals frozen.
Dry ice is a harmless substance as long as it is handled correctly. Follow the instructions included with your delivery to avoid any problems.
Don’t pick up the packets with your bare hands. Always wear outdoor gloves before handling dry ice as direct skin contact can cause burns. Oven gloves or a heavy towel will also work as hand protection.
Dry ice is also not safe for human consumption so please don’t add to your food or drink!
Disposal of dry ice? should there be any remaining ice in the packs, using gloves, place in well ventilated area e.g. porch, patio or garage well out of reach from children and pets.
We recommend you keep them frozen to maintain freshness until you are ready to use them.
Refer to the film lid for the best before date when stored at -18°C or below.

We always advise as with any medical condition you check with your health care professional although there shouldn't be any problem with you following Diet Chef. Studies have shown that small amounts of weight loss can improve symptoms for PCOS sufferers who are looking to lose weight.

Measuring your BMI is a great way to check if you are a healthy weight for your height. The calculation divides your weight by your height squared.
BMI helps give you an indication as to whether you are at an increased risk of health problems that are associated with overweight and obesity. In general the higher your BMI the greater your risk of health problems. You can use our Free personal profile to check if you are in a healthy BMI range.
A body mass index calculation is for adults. It uses ranges for each category which takes into consideration that people come in different shapes and sizes.

If you register below 18.5 this means that you may be underweight.
If your are between 18.5 and 24.9 this puts you in the healthy weight range.
If you are between 25 and 29.9 this means you may be overweight.
If your BMI is 30 or above this is classified as obese.
If your BMI falls outside of the "healthy" weight range you may want to talk with your GP or Medical Practitioner about how you can best achieve a healthier body weight. If you are over the healthy weight range you can reduce your BMI by losing weight. This is best achieved by following a healthy eating plan and taking regular exercise if possible. If you are classified as underweight it is not recommended you try to lose weight.
